Pulled pork biscuits for 12, baked the day before and built at the lot

Pulled pork biscuits for 12: cornmeal drop biscuits split open and piled with warm pulled pork, a spoonful of tangy honey mustard sauce and a few pickle chips. Drop biscuits skip the rolling and cutting, so they're about 15 minutes of work, and both the biscuits and the sauce are made the day before. At the lot you warm the pork and build. Our make-ahead pulled pork works here.

Lot notes

  • Breakfast kickoff: built for an early game. Everything but the pork reheat is done before you leave.
  • Pork: it rides at 40°F or below and gets reheated to 165°F. Keep the pan at 140°F or above on the cool side, and toss what's been out 2 hours, or 1 hour over 90°F.
  • Fridge life: cooked pulled pork keeps 3 to 4 days. The mustard sauce keeps 1 week. Eat the biscuits within a day.
  • Sanford Stadium: UGA allows no propane tanks, only grills on disposable canisters of 17 oz or less, so reheat the pork on charcoal. On North Campus, where grills are banned, reheat it to 165°F at home and carry it hot in an insulated bag. Sanford Stadium guide.
  • A station for building the biscuits: the Daylodge Workspace is a portable camp kitchen bag with a fold-out 12 × 18 inch bamboo cutting board, with utensil, bottle and cup panels behind it. Daylodge says its straps hang it from many SUV roof racks and truck beds, so you can split and build right there.

Can you make biscuits ahead for a tailgate?

Yes. Bake them the day before, let them cool all the way and keep them in a zip-top bag on the counter. Warm them on the grill for a couple of minutes before splitting.

How do you keep pulled pork warm at a tailgate?

Reheat it covered over indirect heat to 165°F, then keep the pan on the cool side of the grill so it holds at 140°F or above.

How much for 20 people?

Make the biscuits twice for 24, mixing 2 separate doughs: 4½ cups of flour, 1½ cups of cornmeal, 2 tbsp of baking powder, 1 tsp of baking soda, 2 tbsp of sugar, 2 tsp of salt, 2½ sticks of butter and 3 cups of buttermilk. Plan on 6 lb of pulled pork, a double batch of sauce and 2 jars of pickles.

Can you make these without a smoker?

Yes. Any pulled pork works, including slow cooker or oven pork shoulder. Reheat it to 165°F at the lot.

Can you cook at Sanford Stadium?

Yes, on charcoal. The guide's grill rule reads "Charcoal is fine. No propane tanks for anything, fryers and heaters included, except grills on disposable canisters of 17 oz or less. No wood fires or chimineas." On North Campus, grills and cookers of any kind are banned. See the Sanford Stadium guide.
