Lot notes

  • Kroger Field rule: the guide's grill rule reads "At least one 5-pound ABC fire extinguisher. Large industrial-size cookers need UK Athletics approval before game day." Kroger Field stadium guide.
  • Indirect heat only: over direct flame the bottoms burn before the middle warms through. If your grill is small, bake one pan at a time.
  • Holding: keep the baked pans covered on the cool side so they stay at 140°F or above. Eat them within 2 hours of coming off the heat, or 1 hour over 90°F, and toss the rest.
  • Cold on the way: the built pans ride at 40°F or below. Deli turkey keeps 3 to 5 days once opened, so buy it close to game day.
  • Cleanup: the foil pans go in the trash bag.

Can you make Hot Brown sliders ahead?

Yes. Build them the night before, brush on the garlic butter, cover them and refrigerate. Pat the tomatoes dry so the rolls don't get soggy overnight. Bake them on the grill at the lot to 165°F.

How do you keep sliders hot at a tailgate?

Leave the covered pan on the cool side of the grill with the lid down. Check the center with a thermometer now and then, and keep it at 140°F or above.
